Carrot, Red Pepper & Sweet Potato soup

This hearty soup goes well with sundried tomato bread. To make it more warming for thoses chilly winter days, uses a tablespoon of curry paste in a cup of water instead of the chicken broth. I usually use one of the pataks range of pastes. This will also make the recipe vegetarian friendly. 

At about 250 calories with 4g of protein, this won't ruin your waistline either. If you need more protein, add a handful of red lentils per portion as you add the water.
